  2. Blend the tofu, yogurt, cocoa powder, maple syrup, vanilla, espresso powder, and salt on high for a full minute, scraping down twice, until absolutely smooth.
  3. Melt the chocolate chips in 20 second microwave bursts, stirring between each, until just liquid, then let them cool for 1 minute.
  4. With the blender running, pour in the melted chocolate and blend 30 seconds more. The mousse thickens noticeably as it emulsifies.
  5. Divide among 6 small cups or ramekins, cover, and refrigerate at least 2 hours to set. Store covered in the fridge for up to 4 days.
