Nearly every protein bite recipe is soft and rolled. This one bakes in a mini muffin tin and comes out crunchy, closer to a granola cluster than a dough ball. Egg white is the binder, so the bites set hard and survive a backpack better than any no-bake version. Sunflower seeds and hemp hearts carry the protein and there is not a nut in the recipe.

  1. Heat the oven to 325F and grease a 24-cup mini muffin tin thoroughly, including the flat surface between the cups.
  2. Warm the sunflower seed butter and honey in the microwave for 30 seconds and stir until the mixture pours easily.
  3. Combine the oats, sunflower seeds, hemp hearts, protein powder, cinnamon, and salt in a large bowl, then pour in the warm sunflower butter mixture and the egg whites and stir until every oat is coated.
  4. Pack the mixture firmly into 20 of the muffin cups, pressing hard with the back of a spoon so the tops are level and compact.
  5. Bake for 18 to 20 minutes, until the edges are deep golden, then scatter the mini chocolate chips over the hot tops so they soften and stick.
  6. Cool in the tin for a full 30 minutes before lifting the bites out with a butter knife, or they will crumble.
  7. Store in an airtight container at room temperature for up to 1 week, or freeze for 3 months.

Can I make these without a mini muffin tin?
Press the mixture into a parchment-lined 8-inch square pan, bake for 22 minutes, and cut into squares while still warm. Same result in a different shape.
Can I leave out the egg whites?
They are the binder, so removing them gives you loose granola. For an egg-free version use 2 tablespoons of ground flaxseed mixed with 5 tablespoons of water and expect a softer bite.
Do these need to be refrigerated?
No. They keep at room temperature for a week in a sealed container, which makes them the easiest option here for packing several days ahead.
Are they gluten-free?
Only if you use certified gluten-free oats. Standard rolled oats are usually cross-contacted with wheat during processing.
