These are the bar to make if store-bought keto bars taste like sweetened chalk to you. Ingredients
- 1 cup chocolate whey isolate (120g)
- 3/4 cup blanched almond flour (84g)
- 1/2 cup natural creamy almond butter (128g)
- 1/3 cup unsweetened cocoa powder (28g)
- 1/4 cup refined coconut oil, melted
- 1/3 cup powdered allulose
- 1/3 cup sugar-free chocolate chips (60g)
- 1/3 to 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine sea salt
Instructions
- Line an 8x4 inch loaf pan with parchment, leaving an overhang on the long sides so you can lift the slab out later.
- Whisk the whey isolate, almond flour, cocoa powder, allulose, and salt together in a large bowl until no streaks of cocoa remain.
- Stir in the almond butter, melted coconut oil, and vanilla, then add almond milk two tablespoons at a time until the mixture comes together as a stiff, sticky dough you can knead with a spatula.
- Fold in the chocolate chips, scrape the dough into the pan, and press it flat and even with a piece of parchment over your hand.
- Chill for at least 2 hours, until firm all the way through, then lift the slab out and cut into 10 bars with a long knife wiped clean between cuts.
- Wrap each bar individually and keep them in the refrigerator for up to 2 weeks or the freezer for up to 3 months.
