Instructions
- Rinse the rice, then simmer it with 1 1/2 cups water and a pinch of salt, covered, for 15 minutes. Pull it off the heat and stir in the zest of one lemon and 1 tablespoon of the olive oil.
- Heat the remaining tablespoon of oil in a large skillet over medium-high. Add the ground turkey, press it into one flat layer, and do not touch it for 4 minutes so a brown crust forms.
- Break the turkey into large chunks, add 4 of the minced garlic cloves, the oregano, and 1 teaspoon salt, and cook 3 more minutes. Squeeze in the juice of one lemon and scrape the browned bits off the pan.
- Squeeze the grated cucumber dry in a clean kitchen towel, then stir it into the Greek yogurt with the last garlic clove, the juice of the second lemon, and 1/2 teaspoon salt.
