High-Protein Chicken Burrito Bowl

Four bowls, forty minutes, and roughly six dollars a serving instead of fourteen. The chicken gets a dry rub and a hard sear so it does not turn to rubber on day three, and the crema is Greek yogurt instead of sour cream, which adds protein rather than just fat.
Ingredients
- 1 1/2 lbs boneless skinless chicken thighs, diced
- 1 tbsp chili powder
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 1/2 tsp salt
- 2 tbsp olive oil
- 1 1/2 cups jasmine rice, cooked
- 1/4 cup chopped cilantro
- Juice and zest of 2 limes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 1 cup pico de gallo
- 3/4 cup plain Greek yogurt
Instructions
- Toss the diced chicken with the chili powder, cumin, paprika, garlic powder, and 1 teaspoon of the salt.
- Heat the olive oil in a large skillet over medium-high until it shimmers. Add the chicken in a single layer and do not touch it for 4 minutes, so it sears rather than steams.
- Stir and cook another 4 to 5 minutes until cooked through and browned at the edges. Set aside.
- Stir the cilantro, the juice and zest of 1 lime, and 1/4 teaspoon salt into the cooked rice.
- Make the crema: whisk the Greek yogurt with the juice of the remaining lime and the last 1/4 teaspoon salt. Thin with water until drizzlable.
- Divide the rice among 4 containers, then top with chicken, black beans, corn, and pico. Keep the crema in separate small containers and add it when you eat.
Tips
- Thighs, not breasts. Breasts dry out by day two of meal prep and thighs do not.
- Keep the crema and pico separate until serving or the rice goes soggy.
- Let everything cool before sealing the containers, otherwise condensation makes the whole bowl wet.

- Four days refrigerated. The chicken and rice freeze well for 3 months, but leave out the pico and crema if freezing.
- Can I use chicken breast?
- Yes, but cut the sear time to about 3 minutes per side and expect a drier result on later days.

- Swap the rice for cauliflower rice. That drops it to about 300 calories while keeping the 48 grams of protein.
