Most protein brownies fail for one reason: they get baked until a toothpick comes out clean. Protein sets faster and tighter than flour, so a clean toothpick means you already went two minutes too far. These come out of the oven looking underdone on purpose and firm up into something genuinely fudgy as they cool.

  1. Heat the oven to 325F, lower than a normal brownie recipe, and line an 8x8 inch pan with parchment leaving overhang on two sides.
  2. Whisk the Greek yogurt, eggs, brown sugar, melted butter, and vanilla in a large bowl until completely smooth with no streaks of yogurt.
  3. Sift the cocoa, almond flour, protein powder, baking powder, and salt over the wet mix, then fold with a spatula only until the dry streaks disappear. The batter will be thick like frosting, which is correct.
  4. Spread into the pan, scatter the chocolate chips on top, and bake 18 to 20 minutes. Pull them when the edges are set and the center still looks wet and jiggles slightly, and a toothpick comes out with damp crumbs clinging to it.
  5. Cool completely in the pan for at least an hour before lifting them out. They finish setting as they cool, and chilling for 30 more minutes gives the cleanest cuts.
  6. Store airtight in the fridge up to 5 days, or wrap individual squares and freeze up to 3 months.

Yes, and the texture is softer. Casein absorbs far more liquid though, so add 3 to 4 tablespoons of milk until the batter spreads instead of clumping.
Can I make these without protein powder?
