No blender, no gritty scoop floating on top. The reason most protein coffees fail is that whey hits cold acidic coffee and seizes into clumps you cannot shake out. Making a smooth paste with room temperature water first solves it in fifteen seconds. Everything after that is just pouring.

  1. Put the protein isolate and the 3 tablespoons of room temperature water in a shaker bottle or wide-mouth jar and shake 15 seconds until it is a smooth paste. This slurry step is the entire recipe.
  2. Add the milk, vanilla extract, syrup, and salt and shake another 10 seconds. The paste dissolves into cold milk without a single lump.
  3. Fill a 16 ounce glass with ice and pour the milk mixture over it.
  4. Pour the cold brew slowly down the inside of the glass over the back of a spoon so it layers on top, then stir once right before drinking.
  5. Let the foam settle for about a minute before your first sip. To make it ahead, keep the mixed milk and coffee in a sealed jar in the fridge up to 24 hours and add ice only when you pour.

Can I use regular coffee instead of cold brew?
Yes, as long as it is fully chilled. Cold brew is less acidic so it clumps protein less and tastes less sour against milk, but chilled drip works fine with the slurry method.
How do I keep the two layers separated?
Pour the coffee last, slowly, over the back of a spoon. The layers hold because the milk mixture is slightly denser, and they will merge on their own within a couple of minutes.
Can I make this hot?
Not with whey isolate, which curdles above roughly 140F. Use a casein or collagen based powder, heat the milk separately, and never heat the liquid with the powder already in it.
Is a protein latte a decent breakfast?
